I like to make this yummy recipe from Michael Lomonaco a day ahead so that they can slow-cook and fill the house with that luscious smoky, sweet, tart smell.  Nothing like coming home from a hard day's work and feeling "the love" of dinner beckoning you to sit down, relax, forget the cares of the day.  Toast each other with a nice glass of wine, and share the
ribs.jpg moment, in love with how great life is!  You and your partner will enjoy a nice lemon sorbet after dinner and then go shower and snuggle!

Drunk & Sweet Baby Back Ribs

4 racks baby back pork ribs (5-6 lbs), cut into individual ribs
1 cup Spanish sherry vinegar
1 cup honey
1/4 cup soy sauce
1 tablespoon smoky paprika
1 tablespoon Chipotle chilies in Adobo sauce, chopped
3 cloves garlic, finely chopped
Salt and pepper

Put rib racks in a large plastic zipper bag

Whisk together vinegar, honey, soy sauce, paprika, chili and garlic in a bowl

Pour marinade over ribs.  Zip bag and shake the marinade and ribs so that marinade totally covers ribs.

Refrigerate marinading ribs for 2-3 hours or overnight. Turn marinade and ribs a few times in fridge.

Preheat oven to 400°F.

Spray two 13x9 pans with cooking spray.

Place the ribs and the marinade in one layer in baking dishes, season with salt and pepper.

Roast ribs 30 minutes at high heat, then turn oven down to 325°F, and continue to roast for an additional 45 minutes, turning ribs over using tongs to brown other side.

Cook until browned and serve with a drizzle of the reduced marinade.

Serve with hot rolls, fresh green salad and a nice Merlot.  Lip smacking good!
A tasty tahini sauce with a "kick" helps transform left-over cooked chicken.  I used grilled chicken breasts (2) for my DH and I.  This is a simple, quick meal that you can create in less than 30 minutes.  I added peas and sliced carrots and it was a one dish meal...kind of Moroccan!  He actually liked it and that made me happy!  I served the chicken over rice.

3/4 cup de-fatted chicken stock
1/4 cup tahini
2 TBS low-sodium soy sauce
1 TBS honey
1 clove garlic, minced
2 tsp grated fresh ginger
1 tsp hot-pepper sauce
2 cups cubed cooked chicken

If you are adding veggies, steam them while you're preparing the Tahini Chicken.

Prepare rice as directed.

In a 2-quart saucepan over medium heat, bring the stock to a boil.  Reduce the heat to low.  Whisk in the tahini, soy sauce, honey, garlic, ginger and pepper sauce until smooth.  Stir in veggies and chicken.  Heat through.

Spoon mix over rice and enjoy!

205 calories, 10 g. fat (43% of calories), 1.3 g. dietary fiber (sans veggies), 48 mg. cholesterol, 512 mg. sodium.

Prep time:  10 minutes
Cook time:  20 minutes

Cleanup - a breeze!  You're happy, they're happy, healthy and love you immensely! :)
I went fishing in Colorado with my friends, Gary and Marsha.  It was a beautiful lake in southwestern Colorado, in Paonia State Park.  It was so much fun.  Even though I fell out of the boat at the end of the day.  I ruined my camera because I was holding onto it when I fell overboard.  I wanted so much for that camera to work...but alas, I'm not omnipotent.  I couldn't revive my camera, but boy did we catch some great fish!

Here is the recipe that we used on these yummy fish.  You can change ingredients to make it more healthy, but it is just yummy when you're camping (with an RV and an oven).

BAKED TROUT FILLET

Ingredients:
Trout fish fillets
flour
corn flake crumbs
1 egg
salt
pepper
lemon juice

Line cookie sheet with foil and rub generously with butter.
Dip each fillet in flour; then beaten egg; then corn flake crumbs.
Place on foil.
Sprinkle with salt and pepper.
Place in 425 degree oven for 15 minutes.
Remove; drizzle melted butter on each fillet.
Sprinkle with lemon juice.
Reduce heat to 375 degrees and bake 15-20 minutes more.
It is not necessary to turn fillets when baked this way.

The music we enjoyed on this camping/fishing trip was amazing.misty-mountain-colorado.jpg The water was awesome. My friends laughing at me when I realized I didn't have control over the fact that I wasted my camera.  The pine trees were my Buddhas.  This is a great recipe for anyone catching fresh fish.

Greetings World!

The best of 2008 to you!  This is my prayer for you this year.  That you know that you are part of the Sacred.  That you believe with your whole being that you are the Goddess here on earth.  That you are loved more fully and <img src="http://www.wisewomen.org/goddess/images/coffee.jpg" border="2" hspace="4" vspace="4" align="right"> wholly than you ever imagined.

It's been quite a year for me.  Turning 54, realizing that I'm in the prime of transitions and that it is all good.  I love my body as I watch it fall apart!  I love my "wings" flapping in the wind as I raise my arms.  It's all good.  It's all Goddess! :)

The Divine is me doing this.  Writing in my blog.  Cleaning my office.  Snarling at something that displeases me.  Getting hammered again with lack of funds where they're needed.  It's all divine in action.  If we only "get" this.  Not just for our own lives, but for everything we see in the world that seems out of whack.  For everything we see that displeases us.  Every "thing" is divine.  Murder, rape and mayhem are all the Goddess acting out Herself so that she can experience that and then move closer to "Love", closer to "Home".

Everything is Love becoming on this earth plane.  Love is chaotic.  Love is messy, unorganized, painful and pleasurable, pulsing and postulating.  Love is manipulative, masquerading and marvelous.  Love is Divine.  Goddess is Divine.  And so are you.

When we come up against something in our lives that seems awful, terrifying, messy and makes us weep, we can take a deep breath and say, "Oh, Goddess, this is you too."  It make take a week or two to come to that realization because, hey, we're used to being humans and not Goddesses!

I am with <a href="http://www.thework.com" target="_blank">Byron Katie</a>.  I know everyone who is reading this is in love with me.  I just don't expect them to realize that right now.  Because you know, when we stop judging, medicating, shaming, or any of the other negative ways we deal with "what is", and throw this out to other people, we are throwing it into our own face.  So, when we learn to love ourselves as Goddesses that we are, Spirit, what is, we know that we love ourselves.  When we love ourselves, we love others - just as they are - and see the Goddess living in the world.  So when you love yourself as a child of the Divine, you will love me as a child of the Divine.  We're siblings of the Divine!  :) Did you get that?



I find that toning with sound can completely change your outlook, your depression and your self-esteem at any given moment.  Try this when your frazzled!  It works.

Microwaving Water!

A 26-year old man decided to have a cup of coffee. He took a cup of water and put it in the microwave to heat it up (something that he had done numerous times before). I am not sure how long he set the timer for, but he wanted to bring the water to a boil. When the timer shut the oven off, he removed the cup from the oven. As he looked into the cup, he noted that the water was not boiling, but suddenly the water in the cup "blew up" into his face. The cup remained intact until he threw it out of his hand, but all the water had flown out into his face due to the build up of energy. His whole face is blistered and he has 1st and 2nd degree burns to his face which may leave scarring.

He also may have lost partial sight in his left eye. While at the hospital, the doctor who was attending to him stated that this is a fairly common occurrence and water (alone) should never be heated in a microwave oven. If water is heated in this manner, something should be placed in the cup to diffuse the energy such as a wooden stir stick, tea bag, etc., (nothing metal).

It is however a much safer choice to boil the water in a tea kettle.

Thanks for contacting us, I will be happy to assist you. The e-mail that you received is correct. Microwaved water and other liquids do not always bubble when they reach th e boiling point. They can actually get superheated and not bubble at all. The superheated liquid will bubble up out of the cup when it is moved or when something like a spoon or tea bag is put into it.

To prevent this from happening and causing injury, do not heat any liquid for more than two minutes per cup. After heating, let the cup stand in the microwave for thirty seconds! before moving it or adding anything into it.

Here is what our local science teacher had to say on the matter: "Thanks for the microwave warning. I have seen this happen before. It is caused by a phenomenon known as super heating. It can occur anytime water is heated and will particularly occur if the vessel that the water is heated in is new, or when heating a small amount of water (less than h alf a cup).

What happens is that the water heats faster than the vapor bubbles can form. If the cup is very new then it is unlikely to have small surface scratches inside it that provide a place for the bubbles to form. As the bubbles cannot form and release some of the heat has built up, the liquid does not boil, and the liquid continues to heat up well past its boiling point.

What then usually happens is that the liquid is bumped or jarred, which is just enough of a shock to cause the bubbles to rapidly form and expel the hot liquid. The rapid formation of bubbles is also why a carbonated beverage spews when opened after having been shaken."

If you pass this on you could very well save someone from a lot of pain and suffering.

Actually, I've finally realized what has happened to all those feelings, frustrations, non-realized dreams of my youth. They were there, menopause superheated them, and then someone jostled me and "poof" I blew up!

Makes perfect scientific sense to me! :)
